Locally Owned Okotoks Restaurant Expands to 2nd Location

Pho Hoai Vietnamese, the first Vietnamese restaurant in Okotoks that specializes in Vietnamese noodle soup called pho, is opening a second location in town. Owners Roger and Lyndsey Tran have opened Saigon Sub Okotoks right next door to their incredibly popular pho restaurant and are excited to share new flavours with the community.

Vietnamese Subs That Explode with Flavour

If you haven’t tried a Vietnamese sub, called Bánh mì, you are missing out. Saigon Subs Okotoks serves sub sandwich like no other. Bánh mì (pronounced ‘bun mee), combine savoury ingredients like beef or chicken satay, barbeque beef, lemongrass chicken, or vegetarian options like tofu with crisp and crunchy thin cut vegetables on a delicious baguette. The incredible marinades, spices, and sauces combine with the freshness of the vegetables to make an incredibly mouth-watering meal.

Roger and Lyndsey have applied the same diligence to fresh, tasty ingredients that has made Pho Hoai Vietnamese so popular to their new venture right next door. Saigon Subs Okotoks is a great spot for family-friendly and tasty food. They even have mini-subs for the little ones in the family. 

It All Started with Mother’s Recipes and Hard Work

In 1987, the matriarch of the family and CEO, ‘Mother’ Theresa Nguyen, started Pho Hoai in the heart of Calgary’s China Town. Her store was the first of its kind and the longest-standing restaurant in the ethnic village.

Theresa fled the Vietnam War in the mid-'70s, seeking refuge for her young family. When she first arrived in Canada, she cleaned office buildings. When she had saved enough money, she bought a small video store and then her restaurant. Theresa worked her way up by serving some of her family's most loved recipes in her beloved noodle shop.

Delicious Fresh Food Passed Down to the Next Generation

Theresa’s legacy continued when Roger & Lyndsey Tran decided to leave the corporate lifestyle in 2014 and enter the world of entrepreneurship.

“With a small push from Mother, we sought out an available restaurant space located in the small town of Okotoks and we haven’t looked back since,” says Roger. “We take pride in knowing our customers ‘usual’ orders and we frequently have them on the table as soon as they’re seated. We are always looking to serve, just ‘Pho’ you!”

He continues, “We were the first Vietnamese restaurant in Calgary to specialize in pho when Mother opened in 1987. We brought our same name and recipes to Okotoks. Everything is made from scratch and most of the recipes are family recipes passed down.”
